For the 3rd week of May, our staff member Tyler mixes us up this refreshing and fruity take on a mojito. Something that you should know heading into this recipe is that Tyler doesn’t always do measurements in his cocktails, so this recipe is a cross between winging it, and detail. But honestly, you can’t really mess up these flavours. Mix this one up as strong or as light as you like!

Our Cup of Choice: Party Mix Cups

We’re still coming down off the high of our Friday the 13th Parking Lot Party, so Tyler picked out our Party Mix Cups for this one. These cups are made up of all of the excess colour of our other work, meaning that every cup is one of kind, and they show off the pink from the strawberry puree so well!

Ingredients:

  • Lime Juice

  • Fresh Mint

  • Granulated Sugar

  • Strawberry Puree Simple Syrup*

  • White Rum

  • Sodawater

*To make the Strawberry Puree Simple Syrup, Tyler simmered 3/4lb of strawberries with 1/4 cup of sugar, 1 tbsp of lime juice for 10-15 minutes. Then strain to remove seeds. This can be kept in an airtight container in your fridge for 2 weeks!

We mixed these cocktails straight into the glasses but you can adjust this recipe to mix in a pitcher for a large batch!

Start by adding a few leaves of mint, some sugar (the virgo in me says 1/2 tsp should do, but Tyler didn’t measure it) and a splash of lime juice into the bottom of your Party Mix Cup. Next, you want to muddle these three ingredients together. This will make the mint very fragrant, and your sugar will clump together and start to dissolve with the lime. Now you want to add ice. We use very large cubes, because they’re slow melting helps in our hot shop, but any cubes will do. Top this up with more lime juice, as much as you want. Follow this up with white rum, Tyler mixed us up some doubles, so he added 2.5 oz into each cup. You can add as much or as little rum as you like. Up next, fill this with soda water. We use our soda stream, but you could use any brand or kind, flavoured or unflavoured. Finish by adding the strawberry puree simple syrup — Ty free hand poured this, but we’d guess 1-1.5 oz will give you lots of flavour. Stir!

Garnish:

  • Fresh Mint

These mint leaves will add freshness and fragrance to your finished cocktail. Honestly it almost looks too good to drink!
